– 1 cup cooled coconut water

– 5 ounces kalettes, sliced lengthwise
– 2 oranges
– 1/8 cup extra virgin olive oil
– 1/4 cup sliced red onion
– 1/4 cup toasted pine nuts
– 1 teaspoon orange zest
– 1/4 teaspoon salt, divided
– 1/8 cup apple cider vinegar

Preparation Method:

– Get a deep salad bowl, put the kalettes in it and drizzle with vinegar. Sprinkle with 1/8 teaspoon salt and toss to coat.
– Set aside for around 10 minutes.
– Add orange zest, then peel and slice into bite-sized pieces.
– Grab a measuring cup. Add in it the other part of the orange zest, some olive oil, 1/8 teaspoon salt and pepper to taste.

– 1 pound kalettes
– 2 tablespoons extra virgin olive oil
Sea salt
– Lemon
– Parmesan (optional)

Preparation Method:

– Preheat oven to 450°F.
– Trim kalettes’ ends and slice in half.
– Divide between two baking sheets and toss with olive oil. Flavor nicely with salt and pepper.

– 5 ounces kalettes
– 1/8 cup crumbled blue cheese
– 1 medium vertically sliced onion
– 4 tablespoons divided extra virgin olive oil
– 1 teaspoon dried thyme
– 2 tablespoons balsamic vinegar
Sea salt and pepper

Preparation Method:

– Pre-heat your oven to 425°F.
– In a medium pot, heat 1 and a half tablespoons olive oil, then add the onions. Sauté for around 5 minutes. Then lower the heat to lower medium degree, and let the onions sauté for another 10 minutes, while stirring from time to time.
– Place the kalettes on a rimmed baking sheet, and sprinkle with the rest of the olive oil. Then do the same with the thyme and balsamic vinegar.

– 5 ounces of kalettes, washed and sliced
– 10 ounces gluten-free pasta
– 2 teaspoons dried parsley
– 1/2 juiced lemon
– 1 teaspoon nicely grated lemon rind
– 3 cloves peeled and ground garlic
– 3 tablespoons extra virgin olive oil
– 1/2 cup crumbled sheep’s milk feta cheese
Pepper and sea salt to taste

Preparation Method:

– First cook the pasta according the instructions on the back of its package. Drain, and set aside.
– Turn on the oven at medium heat degree. Heat the olive oil in a sauté pan. Sauté the garlic for at least 2 minutes until it becomes lightly brown.
– Add in the kalettes, and let them sauté for 5-6 minutes, and add 2 tablespoons water to steam in between.
– Wait until the kalettes become tender. Then, add the lemon rind, juice, pepper, salt, parsley, and the pasta. Steam for 3-4 minutes until the ingredients become cohesive.
