Preparation Method:

– Grab a medium sauce pan and set your oven to medium heat. Put in the pan 1 ½ cups of all the milk, the vanilla pod and seeds, and leave them to burble on the oven.
– In the meantime, use a medium bowl to beat the condensed milk, the eggs, egg yolk, nutmeg, cornstarch, and sea salt until you have a homogeneous texture and a pale-yellow color.
– Gradually pour the hot milk mixture into the egg mixture, whisking all the time. After that, pour it back into the pan. Use a wooden spoon to stir constantly over low heat, until the mixture begins to thicken. It usually takes circa 10 minutes.
– Remove from the oven and immediately pour in the remaining ½ cup of milk, again while stirring.
– Move the eggnog in an ewer or a jug. Cover it with something and leave it in the fridge for at least 4 hours or for an entire night.
– Take the vanilla pod away. Add the rum/bourbon if you wish to bring some spirit spiciness to the eggnog.

– 1 cup strong coffee or brewed espresso

Preparation Method:

– Use a medium pan to blend the boiling water and the chopped chocolate. Stir until the chocolate has melted.

– 6 large hard-boiled eggs
– 6 small hard-boiled eggs
– Uncooked pasta
– 1 carrot
– Peppercorns
– Parsley
– 1 skewer /BBQ stick

Preparation Method:

– Peel off the egg shells. Peel the carrot and cut its ends. Then slice the carrot so that you have 6 round pieces from each end with width of 0.5 cm.
– Cut off the top and bottom of the eggs.
– Pierce the eggs with the BBQ skewer to make a hole then pull them out. Do the same with the carrot slices.

Goat Cheese Grape Balls

– Wash the grapes and dry them.

Tomatoes are a weakness of ours, and we don’t even have to begin talking about how much we love them when they are mixed with basil and olive oil. And when all that is spread on a crunchy, wholegrain bruschetta… just makes your mouth drool by thinking about it! So don’t just think about it, cook it this Christmas!

– 1 regular or wholegrain Italian bread/baguette French bread
– ¼ cup (60ml) olive oil
– 1 tablespoon extra-virgin olive oil
– 6 or 7 ripe plum tomatoes or another tomato sort (around 1.5 lbs)
– 6-8 fresh basil leaves, sliced or chopped
– 2 minced garlic cloves (around 2 teaspoons)
– 1 teaspoon balsamic vinegar
– ½ ground black pepper (or to taste)
– 1 teaspoon sea salt (or to taste)

General tips and notes:

The recipe suggests plum tomatoes, because they’re somewhat thicker on the inside, with less juice and seeds. They’re easier to blend with the other ingredients and maintain coherence. However, feel free to use a tomato sort of your liking. If you choose cherry tomatoes, don’t waste time blanching or peeling, simply quarter them.

To easily chop the basil leaves, you can stack them on top of each other then roll as if you were rolling a cigar. Make thin slices from one end to the other and you’re all done.

Preparation Method:

– Blanch and peel tomatoes. To do that, boil 2 quarts of water. As the water is heating, cut them shallowly in a cross pattern at the tip ends of the tomatoes. This procedure will make the tomatoes easier to peel. When the water heating hits boiling point, remove the pot from the stove and put the tomatoes in it to blanch for 1 minute. Remove tomatoes with a slotted spoon and leave them to cool a little. Carefully remove the skins and use a paring knife to remove the stem base. Cut the tomatoes into either quarters or halves then try to squeeze the juice and seeds out of them.
– Preheat the oven to 230°C (450°F) and put the rack in the highest oven slot.
– Chop the tomatoes nicely and put them in a medium bowl. Mix in the minced garlic, balsamic vinegar and the 1 tablespoon of extra virgin olive oil. While stirring, add the basil, salt, and pepper. Add the recommended amounts or experiment gently to adjust to your taste. Tomatoes absorb a lot of salt, so it may take more then you thought it would to add some flavor to them.
– Slice the bread diagonally to make 0.5 inch thick slices. Sprinkle each slice with olive oil and place olive oil-side down in a roasting pan or on a baking sheet. When the oven reaches 230°C, toast the bread slices in the top rack for 5 minutes until they gain a light-brown color on the edges. You may need to toast them in batches, but a good result is worth the effort.

Christmas Tree Pull-Apart


Picture this: you singing “O Christmas Tree! O Christmas Tree! Thy leaves are so unchanging” and grabbing a huge scrumptious piece of this pull-apart tree! You can really spark up your Xmas dinner with such a creative dish. If you have guests, some of them could want to take a photo on the whole tree before everyone starts pulling their share. This is a lovely Christmas appetizer that can quickly become anybody’s main course if they snatch a second and third piece.


– 1 can (13.8 oz) refrigerated wholegrain artisan pizza crust or a regular pizza crust
– 1 cup shredded mozzarella or Italian blend cheese
– 4oz (or half a brick) cream cheese
– 3 tablespoons freshly chopped rosemary and basil
– 1 clove finely minced garlic
– 2 tablespoons butter
– 1 cup warmed marinara sauce for dipping

Preparation Method:

– Heat the oven to 400°. Place the pizza dough on a work surface and stretch it to a 10×15 inch size.
– Use a pizza cutter to cut the dough into 36 equal squares or circles.
– Mix nicely the cream cheese and shredded cheese in a bowl.
– Add 1 tablespoon cream cheese over each square/circle of dough.
– Make a ball with the dough to seal the edges.
– Place on a cookie sheet in a alder tree form.
– Bake for from 15 to17 minutes, until the dough becomes golden brown.

Layered Mashed Potato & Mushroom Casserole


A Christmas lunch or a Christmas dinner does look a lot better with a good old casserole on the table, doesn’t it? And if you like casseroles, here’s one that’s very tempting and feels incredibly on the palate, especially if you’re into potatoes and a strong mushroom touch in a savory dish.

Prep time: 1 h 20 m
Servings: 12
Serving size: about 3/4 cup


– 1 ½ lbs halved white mushrooms or cremini mushrooms
– 3 ½ lbs potatoes, peeled and cut into 1 inch pieces
– ½ cup nonfat buttermilk
– 2 tablespoons all-purpose flour
– 3 cloves finely chopped garlic
– 1 cup grated Parmesan cheese, divided
– 4 cups chard or spinach, trimmed and nicely chopped
– 3/4 cup chopped shallots
– 1 large egg plus 1 large egg white, beaten
– 1 cup mushroom broth or low-sodium beef broth
– ½ teaspoon chopped fresh rosemary
– 1 ¼ teaspoons sea salt, divided
– 1/2 teaspoon freshly ground pepper
– 1 tablespoon butter
– 1 tablespoon extra-virgin olive oil

Preparation Method:

– Pour 1 inch water in a big pot to simmer on the stove. Place the potatoes in a steamer basket. Cover them and steam at medium-low heat, replenishing the water if necessary. Steam until potatoes become tender, it usually requires 20 to 30 minutes.
– Chop the mushrooms with a knife or in a chopper.
– Put the potatoes in a large bowl. Then add the butter and mash good until you have a puree texture. While stirring, add in the buttermilk, egg, egg white, and 1 teaspoon salt. Set the bowl aside.
– Heat the olive oil in a skillet at medium heat.
– Add the garlic and shallots. Cook for 1 minute while stirring slowly, until you feel their scent.
– Add the mushrooms. Cook and stir frequently for 10-12 minutes until they release their juice and the pan is almost dry.
– Toss in the spinach/chard and do the same for 4 minutes.
– Use a small bowl to whisk the flour and broth. Once they’re mixed good, add them to the pan along with the rosemary, pepper, and ¼ teaspoon salt.
– Stir for 1 minute until the consistency bubbles and thickens.
– Preheat the oven to 400°F.
– To arrange, spread half of the potato stew in an even layer in a 9×13 inch (or similar 3 quart) dish. Dust half the parmesan over the potatoes. Spread the mushroom blend on top, and spread the rest of the mashed potatoes over the mushrooms. Finish with the second half of the parmesan.

New Potatoes With Balsamic And Shallot Butter

– 4 lbs potatoes of your choosing
– 1/3 cup melted butter
– 2/3 cup balsamic vinegar
– 3 tablespoons minced shallots
– 1/8 teaspoon ground black pepper or 1/8 teaspoon tricolor pepper
– 1 ½ finely chopped fresh basil or parsley
– 2 teaspoons chopped fresh thyme
– 1/2 teaspoon salt, divided

Preparation Method:

– Use a small pan to heat the vinegar at medium heat, until it begins to boil. Reduce the temperature to low and simmer until the vinegar is reduced to around 2 tablespoons as quantity. In the end, it will thicken like syrup. The procedure usually takes 10 minutes.
– Transfer the vinegar to another bowl and let it cool for a little.
– In the meantime, use another saucepan to heat the potatoes in deep water. Heat until boiling point, then turn down the heat to low and let them simmer for about 20 minutes, or until they become tender, then drain the water.
– While potatoes are burbling, add to the cooled vinegar some of the rest of the ingredients: the shallots, butter, black pepper, thyme, and ¼ teaspoon of the salt. Mix well to blend everything and set aside.

Roast Christmas Turkey


It would be so untraditional not to include a turkey recipe for Christmas, right? Unless you’re on a vegetarian or vegan diet, we bet you’d be eager to try some of this! This turkey is perfect not only for Christmas Eve, but for every other occasion or Saturday dinner.

– 4 or 4.5 kg higher-welfare turkey, at room temperature
– 1 liters organic chicken or vegetable stock
– 1 large orange
– Olive oil
– 1 sprig fresh sage, leaves picked
– 12 strips thinly sliced streaky bacon or higher-welfare pancetta
– 300g organic minced pork
– 4 peeled, medium onions
– 1 bulb garlic, peeled and broken into cloves
– 2 sticks trimmed and chopped celery
– 1 handful dried apricots
– 1 lemon
– 1 big handful breadcrumbs
– 1 large free-range egg
– 1 pinch grated nutmeg
– Freshly ground black pepper
– Sea salt
– 12 small sprigs rosemary (and a few extra)
– 2 tablespoons plain flour
– 2 peeled carrots

Preparation Method:

– Preheat the oven to maximum. Heat a saucepan, until it’s averagely hot and sprinkle in the olive oil, 6 of the bacon strips/pancetta, and the sage leaves. Chop and peel 1 onion and 2 garlic cloves. Add the celery, garlic, and onion to the saucepan and fry everything lightly, until golden brown.
– Remove the pan from the stove and add in the breadcrumbs. While the mixture is cooling down, cut the apricots and stir them in.
– When the stuffing cools down, add the pork, egg, nutmeg, lemon zest, salt, pepper, and mix everything good.
– Slice in half the remaining bacon strips/pancetta. Slice 1 peeled garlic clove into thin slivers.
– Place a rosemary sprig and a garlic sliver on one end of a halved strip of pancetta and roll it up tightly.

Acorn Squash Stuffed With Chard & White Beans

– 2 medium acorn squash, halved and seeded
– 1 15 oz. can white beans, rinsed
– 1/3 cup coarse dry whole-wheat breadcrumbs
– 8 cups chopped chard leaves (about 1 large bunch chard)
– 1/2 cup chopped onion
– 2 minced cloves garlic
– 1 tablespoon tomato paste
– 1/4 cup chopped olives
– 1/3 cup grated Parmesan cheese
– 1/2 teaspoon freshly ground pepper, divided
– 1/2 teaspoon salt, divided
– 2 tablespoons water

Preparation Method:

– Cut a small slice off the bottom of each squash half so it sits flat on the surface. Smear the insides with 1 teaspoon olive oil. Sprinkle with ¼ teaspoon salt, and ¼ teaspoon pepper. Place in a 9×13 inch dish. You can either steam the squash until it’s fairly tender, or put it in a microwave-safe dish and microwave it for about 12 minutes at high temperature until you have the same result.
– In the meantime, use a skillet to heat 1 tablespoon olive oil on medium heat. Add in the onion and stir for 2,3 minutes until it turns light-brown. Then add the garlic and stir for another minute. After that, put in the rest of the ¼ teaspoon each pepper and salt, the tomato paste, and chard, while stirring. Cover with a lid and cook for 3-5 minutes until tender.
– Stir in olives and white beans. Cook until heated through for a few more minutes. Remove from the stove.
– Place the rack in the middle of the oven. Preheat the broiler.

– 275g / 9 ¾ plain flour or wholegrain flour (plus extra for dusting)
– 1 free-range egg
– 100g / 3 ½ oz unsalted softened butter
– 60g / 2 ¼ oz soft brown muscovado sugar
– 2 teaspoons vanilla extract
– 1 teaspoon ground cinnamon
– 1 tablespoon finely chopped candied peel
– Halved almonds for décor

Preparation Method:

– Preheat the oven to 180C/160C Fan/Gas 4. Line a baking tray with greaseproof baking paper.
– Mix and beat the sugar and butter together in a bowl, until you have a fluffy, light cream. Add the vanilla, crack in the egg, and continue whisking.
– Add in the flour, cinnamon and candied peel, then continue whisking until you have homogeneous dough.
– Roll the dough out on a lightly floured work surface with 1 cm/ ½ inch thickness.
– Use a glass or cookie cutters to shape biscuits out of the dough, then place them on the baking tray.

Strawberry Whipped Cream Santas

Preparation Method:

– Put the cream in a bowl. Mix the stabilizer with the sugar and pour slowly into the cream, while beating it. Beat the cream into dense, fluffy snow.
– Cut the strawberries in half, leaving about 1/3 of the tip of a strawberry for the top element (the hat), and 2/3 of the strawberry for the lower part (the body).

Day One

Ingredients For Fruit Mixture

– 1 440g tin of crushed unsweetened pineapple
– 600g dried fruit (150g raisins, 100g figs, 100g chopped dates or prunes, 150g sultanas, 100g apricots)
– Lemon juice (of 1 lemon)
– 2 tablespoons brandy (optional)

How To Make The Fruit Mix

– Mix all the fruits and marinate in the refrigerator for 24 hours. Stir carefully a few times during the day. Make sure the liquid has soaked into the fruits.

Day Two

Ingredients For Nut Blend:

– 1 ½ cup raw macadamias or almonds
– 1 cup fine coconut, ground
– 8 tablespoons arrowroot

How To Make Nut Mixture:

– Ground as nicely as you can.
– Mix all the ingredients together in another bowl.

Ingredients For Divine Mixture:

– Grated rinds of 2 lemons
– 2 teaspoons ginger powder (or fresh grated)
– 2 eggs
– 4 tablespoons maple syrup
– 2 oz. melted coconut oil or 4 tablespoons coconut cream
– 2 heaped teaspoons of sifted cream of tartar
– 2 teaspoons mixed spice
– 1 heaped teaspoon of sifted baking soda

How To Make Divine Mixture

– When the melted coconut oil has cooled down a little, mix it with the maple syrup.
– Beat 2 eggs in, until they become fluffy.
– Join in the rest of the ingredients and blend gently.

How To Make The Christmas Cake:

– Mix well the fruit mixture with the divine mixture.
– Add the nut mixture in 3 times, while stirring carefully.
